In the weeks before I was due with my son I started preparing meals. This was seriously the best thing I did to prepare for having a newborn! I for sure did not feel like cooking because I wanted to spend every second staring at my perfect baby and it was too time consuming for me to prepare a dinner while feeding/watching a baby and helping my 6 year old step daughter with whatever she needed. Also a plus, you don’t have any dishes to wash since you already prepared everything, days, weeks or a month ago! I decided that I need to start making some more casseroles to stick in the freezer. Now that my son is 16 months and constantly on the move it is much easier to set something out in the morning to make for dinner rather than chase him around while I try to keep an eye on the dinner that I am attempting to cook.
I made homemade mac & cheese, Saturday noodle bake, pizza casserole and tater tot casserole.I prepared them and then put them into the disposable Reynolds containers with the plastic lids. I also wrapped them with Cling wrap since the lids tend to pop off and then labeled each one. Almost any recipe can be made ahead of time and placed in the freezer. Simply pull the one you want to make out of the freezer in the morning and then stick it in the oven when it is time for dinner.

All you need is the following: mozzarella cheese, tomato/pasta sauce (any flavor, brand you want), 1 lb. sausage (browned), pepperonis, cooked rigatoni noodles. It really depends on how much you want to make. But you basically layer everything. Spread a thin layer of tomato/pasta sauce on bottom of pan, Next add a layer of noodles covered by more sauce, then sausage and then cheese. I keep going until I reach the top of the container and then I add a final layer of cheese and then layer the top with the pepperonis. Bake at 350 until hot and pepperonis are browning slightly. We like our pepperoni crispy 🙂 I recently thought it would be good with mushrooms added in…..Serve with a salad and enjoy!
Tater Tot Casserole is super easy too…maybe not the healthiest..but sometimes you just need a little comfort food.
You will need: 1 lb. ground beef (browned), 1 can cream of mushroom, 2 cups shredded cheddar cheese, tater tots. Put the ground beef in the bottom of the pan, layer the cream of mushroom on top of that, cheese on top of that and then layer the top with the tater tots. Bake at temperature and time indicated on the tater tot package.
